Four chefs from Wales compete with canapes, starters and fish dishes that celebrate great Britons of the past. Their creations are judged by 2022 Great British Menu Champion of Champions Spencer Metzgar. The dishes include a leek and potato soup with vegan rarebit, celebrating St David, and a scallop, horseradish and nasturtium dish, honouring the NHS and its Welsh founder, Aneurin Bevan.

The three remaining Welsh chefs cook mains and desserts inspired by great Welsh figures from the past. Spencer Metzgar judges their creations, which include Welsh lamb cooked in three different ways, along with pureed and pickled leeks, paying homage to Welsh poet Dylan Thomas' poem Fern Hill. One chef toasts Captain Arthur Edwards with black forest flavoured choux buns.
