The second heat of the week sees more chefs take the Skills Test, with Monica Galetti challenging them to prepare and cook scallops, and serve them with carrots and a peanut sauce, while Marcus Wareing asks them to take the flavours of a classic Poire Belle Helene - poached pears, chocolate and Chantilly cream - and serve them with layered pastry. In the second challenge, all four contestants have the chance to put the Skills Test behind them and wow the judges with their own Signature Menu. They have one hour and 30 minutes to showcase their style, technique and eye for plating, and serve up a dish worthy of a quarter-final place.
