The winners of this week's heats return for the last quarter-final. Their first challenge is to deliver a dish that represents sunshine - a bright, light and colourful dish that transports the diner to sunnier climes. To help, the larder is packed with fresh seafood, tropical fruits and summer vegetables. The chefs will need to demonstrate an inventive streak - and the technical skill to back it up. The next round sees each given 75 minutes to cook a two-course menu for three of the country's most revered food critics, with the three who impress the most earning their place in Knockout Week.
